During the two-week period that my daughter decided she wouldn't eat salami-
type products at lunch, I came up with several ideas (not enough to keep her
from going back to salami though!).
Anyway, the most successful was pimentos with bottled blue cheese dressing --
you know, those small jars of red pimentos that look like red peppers. She
really liked that one!
If you have access to fresh mozzarella cheese, you could do what is basically
an Italian appetizer on a sandwich -- sliced mozzarella cheese, sliced
tomatoes, and whole basil leaves. I drizzled olive oil on the bread before
I made this one.
There's egg-salad, of course, and tuna salad, but that takes a bit more
planning!
